Ingredients

Chicken

  • 2 chicken thighs
  • 1 tbsp yogurt
  • 1 tsp garam masala
  • 1 tsp kashmiri red chilli powder
  • 1/2 tsp turmeric
  • 1/2 tsp coriander powder

Sauce

  • 2 cloves of garlic
  • 1 tsp of grated ginger
  • 1 shallot
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 tbsp garam masala
  • 2 tsp kashmiri red chilli powder
  • 1/2 cup tomato puree
  • 1/4 cup cream (or coconut milk)
  • Water (as needed)
  • Salt, sugar, and msg to taste

Garnishes

  • Crispy chicken skin
  • Cilantro

Instructions

    Remove the skin from your chicken thighs, slice it into strips, and set it aside. Then cut your chicken into cubes.

    In a bowl, mix your chicken with yogurt, garam masala, chili powder, turmeric, and coriander powder. Let it marinate for at least 30 minutes.

    Heat a pan and sauté your chicken skin until it turns golden and crispy. Take it out and save it for garnish.

    In the leftover fat, add butter and oil. Sauté your garlic, ginger, and shallot until fragrant.

    Stir in your garam masala and chili powder to bloom the spices.

    Add your tomato puree and cook it down until it darkens and thickens.

    Pour in cream (or coconut milk), a splash of water, and season with salt, sugar, and MSG. Let it simmer until the sauce is smooth and slightly thickened.

    Add your marinated chicken cubes to the sauce and cook until fully done.

    Garnish with your crispy chicken skin and fresh cilantro.
