Ingredients

  • 8 oz fish
  • 1 tsp oil
  • 1 clove of garlic
  • 1 tsp of minced ginger
  • 1 scallion
  • 1 small shallot
  • 1/2 a can of coconut milk
  • fish sauce, lime juice, and sugar (honey) to taste

Garnish

  • Green onion
  • Cilantro
  • Sesame seeds
  • Chili oil

Instructions

    Prep the aromatics: Slice your limes and mince garlic, ginger, scallions, and shallot.

    Sauté the base: Over medium heat, sauté garlic, ginger, scallion whites, and shallots in oil until fragrant.

    Build the broth: Shake and add ½ can of coconut milk, then season with fish sauce, lime juice, and honey.

    Poach the fish: Add your fish and let it cook gently in the broth for a few minutes until done.

    Garnish and serve: Top with scallion greens, cilantro, sesame seeds, and chili oil. Serve with rice.
