Rinse your rice: Rinse your sticky rice until the water runs clear.
Cook the rice: Drain the soaked rice and steam it in a steamer or cook it with 1 cup of water until tender and sticky.
Make the coconut sauce: In a small saucepan, combine coconut milk, sugar, and a pinch of salt. Heat gently until the sugar dissolves.
Thicken the sauce: Mix 2 tbsp water with 1 tbsp cornstarch to make a slurry. Stir this into the coconut milk mixture and cook for 1–2 minutes until slightly thickened. Remove from heat.
Combine rice and sauce: Pour about half of the coconut sauce over your cooked sticky rice and gently fold to coat. Let it sit for 5–10 minutes so the rice absorbs the sauce.
Assemble the dish: Place a portion of the sticky rice on a plate, arrange mango slices alongside or on top, and drizzle with remaining coconut sauce.
Garnish: Sprinkle sesame seeds over the top if desired. Serve at room temperature or slightly chilled.
