made this and the sauce was crazy good.

Cut pork belly into 1-inch cubes and blanch in cold water until boiling for 3 minutes; rinse clean.
Heat pan to medium-high and stir fry pork 3 minutes until fat renders.
Remove pork; add rendered fat on medium-low and melt sugar until amber.
Add pork and toss until evenly coated and lightly browned.
Add ginger, scallions, star anise, cinnamon, bay leaves, and Sichuan peppercorns; deglaze with Shaoxing wine.
Add light soy sauce, dark soy sauce, and enough water to just cover the pork.
Simmer covered on low 60–90 minutes, stirring occasionally.
Uncover and reduce until sauce is glossy and coats the pork.
Top with green onions.
