  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • 3 eggs
  • 1/2 tsp salt
  • Pinch of sugar
  • Oil

Garnish

  • Furikake
  • Scallion

Instructions

    Marinate the salmon: In a small bowl, mix miso paste, soy sauce, honey, and sesame oil. Coat your salmon with the mixture.

    Sear the salmon: Heat a pan with a little oil and sear your salmon on both sides until medium-rare. Set aside.

    Prepare the eggs: In a bowl, whisk together eggs, salt, and a pinch of sugar. Cook in a lightly oiled pan until a soft omelet forms.

    Crisp the rice: Heat a claypot or heavy-bottomed pan. Add your cooked rice and let it cook undisturbed until the bottom becomes crispy.

    Assemble: Place the cooked egg on top of the crispy rice, then add the seared salmon.

    Garnish and serve: Sprinkle furikake and sliced scallions on top and serve.
