Ingredients

  • 1 lb salmon belly, skin on
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 2 chilies
  • 1 scallion
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp mayonnaise
  • salt (to taste)
  • cooked rice (to serve)

Instructions

    Prep aromatics; separate scallion whites/greens.

    Pat salmon belly dry; season with salt.

    Pan-fry salmon until cooked through and crispy; chop.

    Sauté garlic, chili, scallion whites, onion in rendered fat.

    Add salmon, soy sauce, lime juice, honey, mayo; toss.

    Cook until bottom crisps.

    Garnish with scallion greens; serve with rice + lime.
