made this and the sauce was crazy good.

Soak your rice noodles in hot water until they turn soft, then drain them.
Slice your carrot and cucumber into thin matchsticks.
Boil your shrimp for 3 minutes, then chill them in ice water.
Fill a large bowl with warm water and dip a sheet of rice paper until it softens.
Lay the softened rice paper on a flat surface, then add a lettuce leaf, some noodles, carrot, and cucumber.
Roll your paper over once, then add your mint, cilantro, and scallion greens.
Roll again, then lay down your shrimp.
Fold the sides of the rice paper in, then roll it tightly from the bottom up to seal.
Mix your peanut butter, hoisin, soy sauce, rice vinegar, honey, and water to make the dipping sauce.
Serve your rolls fresh with the peanut butter sauce on the side.
