Thai Calamari 1

Ingredients

Calamari

  • 1 lb squid
  • 1 Thai chili
  • 1 clove garlic
  • small piece ginger
  • 1 tbsp fish sauce
  • 1/2 cup coconut milk

Flour

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rice flour
  • 1 tsp ground coriander
  • 1 tsp white pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp baking powder

Sauce

  • 1 Thai chili
  • 1 clove garlic
  • handful cilantro
  • 1/2 shallot
  • 5 cherry tomatoes
  • 2 tsp fish sauce
  • 2 tsp honey
  • 1/2 lime
  • 2 tbsp oil

Other

  • oil (for frying)
  • Thai basil

Instructions

    Clean squid; slice into rings.

    Pound chili, garlic, ginger; mix with squid + fish sauce + coconut milk; rest 15 min.

    Mix flour coating; dredge squid.

  4. 4

    Fry at 350°F ~2 min; rest; fry at 400°F ~1 min.

    Fry Thai basil until crispy.

  6. 6

    Make sauce (pound aromatics; mix remaining ingredients).

  7. 7

    Serve calamari with basil + sauce.
