Ingredients

  • 3 eggs
  • 1 scallion
  • 1 clove garlic
  • 1 tsp oil
  • 2 tbsp Thai curry paste
  • 1/2 can coconut milk
  • 1 tsp fish sauce
  • 1 tsp honey
  • 1 tsp rice vinegar
  • Water (to thin)

Garnish

  • 1 tsp scallion greens
  • 1 tsp minced cilantro
  • 1 tbsp crushed peanuts
  • 1/2 tsp chili flakes

Instructions

    Boil your eggs for 7 minutes, then take them out and put them into an ice bath

    Mince your green onion and garlic.

  3. 3

    Saute your garlic and green onion whites over medium low heat for 2 minutes.

    Add your curry paste, and cook for 2 minutes.

    Add your coconut milk, fish sauce, honey, rice vinear, and water to thin, and mix.

    Peel your eggs and add them to your curry sauce.

  7. 7

    Serve over white rice and garnish with your scallion greens, cilantro, and crushed peanuts.
