Thai Steak Sandwich 1

Ingredients

Steak

  • 1 ribeye steak
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp black pepper
  • Handful of Thai basil
  • 8 cloves garlic, crushed

Crying Tiger Sauce

  • 1 tbsp glutinous rice
  • 1 Thai chili
  • 1 small shallot
  • 1/4 cup cilantro
  • 1 lime
  • 1 tbsp sugar
  • 1 tbsp fish sauce
  • 4 tbsp oil

Caramelized Curry Onions

  • Steak fat, chopped
  • 1 white onion
  • 1 tsp salt
  • 1 tbsp Thai curry paste

Other

  • 1/2 baguette
  • 2 tbsp Kewpie mayo

Instructions

    Trim the steak fat and slice it thinly, then slice your onion thinly as well

    Marinate your steak with soy sauce, fish sauce, oyster sauce, and black pepper.

    While the steak marinates, render the sliced steak fat until crispy, then set the crispy bits aside.

    Over medium heat, use the rendered fat to cook your onion with salt until it’s mostly caramelized, then stir in your curry paste and cook it for a few more minutes or until fragrant.

    Over medium high heat, sear your steak on both sides for a minute, then add the garlic and Thai basil and cook until your steak is done to your liking.

    Toast your glutinous rice in a dry pan until browned, then pound it with your Thai chili. Pound in your shallot and cilantro, then mix in your lime juice, sugar, fish sauce, and oil to finish your sauce.

    Slice the baguette open and toast it, then spread Kewpie mayo on both sides.

    Build your sandwich with the steak, sauce, curried onions, crispy steak fat, and the fried Thai basil and garlic from your steak.
