  • 4 eggs
  • 3 tomatoes
  • 2 scallions
  • 1 shallot
  • 1 clove of garlic
  • 1 tsp minced ginger
  • 1 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp ketchup
  • Salt, sugar, and msg to taste
  • 1 tsp sesame oil
  • Scallion greens (to garnish)

Instructions

    Crack your eggs into a bowl, add a pinch of salt, and whisk them together.

    Mince your garlic and ginger, slice your shallot and scallions, and chop your tomatoes into wedges.

    Heat a pan over medium-high heat, add a little oil, and scramble your eggs until just set. Take them out and set them aside.

    Add more oil to the pan, then sauté your garlic, ginger, and shallot until fragrant.

    Add your tomatoes and cook until they break down and release their juices into a sauce.

    Stir in your soy sauce, oyster sauce, ketchup, and a pinch of salt, sugar, and MSG. Let it simmer for a minute.

    Return your eggs to the pan and toss everything together.

    Drizzle sesame oil on top and garnish with your scallion greens.
