Rice Cooker Hainanese Chicken Rice
Ingredients
Chicken Rice
2 skin on chicken thighs
Salt
White (or black) pepper
2 cups of washed jasmine rice
2 1/2 cups chicken stock
1 inch ginger, sliced
2 scallions (cut into 4 inch chunks)
Ginger Scallion Oil
4 tbsp minced scallions
1 tbsp minced ginger
2 tbsp oil
1/2 tsp sesame oil
Salt, sugar, and msg to taste
Directions
Season your chicken thighs with salt and white pepper.
Add your rice, chicken stock, ginger, and scallions to a rice cooker and cook.
Mince your remaining scallions and ginger.
Heat up your oil over medium heat, and fry your aromatics until fragant.
Add your sesame oil, and season with salt, sugar, and msg.
Remove and slice your cooked chicken, then serve with your rice, ginger scallion oil, and sliced cucumber.
